Healthy Apple Pie Alternative

It’s the day before Thanksgiving and as promised, I’m sharing my apple pie alternative!! It’s a simple “baked” apple recipe that is paleo, vegan, and gluten free friendly. If you love the taste of warm apple pie but don’t want the additional calories that come with it, this is the snack for you!

Sarah Does Fitness Approved “Baked” Apple Treat

  • 1 apple (I used a pink lady)
  • 1/2 tbs coconut oil
  • dash of cinnamon
  • dash of all spice
  • **optional: 4 pecans crushed for crunch**

Instructions: chop up your apple, then melt coconut oil for a 15-20 seconds in the microwave. Use a microwave safe bowl, my friends! Stir in apple chunks and spices until well coated. Microwave on HIGH for about 2:30-45, carefully remove, the bowl will be hot. Top with crushed pecans, if desired, and enjoy!
